Vegan recipe
Ingredients (Serves 4)
Jackfruit Filling
2 cups canned young green jackfruit (drained, shredded)
1 tbsp olive oil
1 tsp smoked paprika
1 tsp cumin
½ tsp chili powder
½ tsp salt
½ cup vegetable broth
Dragonfruit Salsa
1 cup diced dragonfruit
¼ cup diced red onion
2 tbsp chopped cilantro
1 tbsp lime juice
¼ tsp salt
Finger Lime Crema
½ cup vegan sour cream
2 finger limes (pearls removed)
½ tsp salt
Other
8 corn tortillas
Instructions
Heat oil in skillet over medium heat.
Add jackfruit, spices, salt; sauté 5 minutes.
Add broth, simmer 10 minutes until tender. Shred further.
Mix salsa ingredients in a bowl.
Stir finger lime pearls into sour cream.
Warm tortillas.
Assemble: jackfruit → salsa → crema.
