Ingredients
Persian cucumbers, sliced: 500 g
Fresh mint, torn: 15 g
Olive oil: 25 ml
Apple cider vinegar: 15 ml
Salt: 4 g
Sugar: 4 g
Fresh finger lime pearls: 30 g
Method
Toss all ingredients. Add finger lime last.
Plating
Serve ice-cold in shallow bowls.
