Birria-Style Jackfruit Tacos + Consommé

Birria Sauce
Dried guajillo chilies: 30 g
Dried ancho chilies: 20 g
Onion: 100 g
Garlic: 8 g
Cumin: 2 g
Cinnamon: 1 g
Apple cider vinegar: 15 ml
Veg stock: 750 ml


Method
Soak chilies 20 min. Blend all sauce ingredients.
Simmer jackfruit in sauce 30 min.
Reduce liquid into dipping consommé.
