Pan Seared Fish with Guava Citrus Sauce

(Great with mahi-mahi, snapper, cod, or salmon)


Ingredients (Serves 2)
Fish
2 fish fillets (6 oz each)
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Guava Sauce
½ cup guava purée
2 tbsp fresh orange juice
1 tbsp lime juice
1 tbsp honey
½ tsp grated fresh ginger
Pinch of salt


Step-by-Step Instructions
Pat fish fillets dry and season with salt and pepper.
Heat olive oil in a non-stick or stainless skillet over medium heat.
Place fish in pan and cook 3–4 minutes per side, until flaky.
Remove fish and keep warm.
In the same pan, add guava purée, orange juice, lime juice, honey, ginger, and salt.
Simmer over medium-low heat for 4–6 minutes, stirring, until slightly thickened.
Return fish to pan and spoon sauce over the fillets.
Cook 1 minute more, then remove from heat.
Plate fish and drizzle with extra sauce.
