Steak & Dragonfruit Summer Salad

Ingredients
1 lb flank steak
Salt, pepper
6 cups mixed greens
1 dragonfruit, cubed
1 avocado, sliced
1 cucumber, sliced
¼ cup goat cheese or feta
Dressing
3 tbsp olive oil
1 tbsp honey
Juice of 1 lime
Pinch of salt & pepper


Steps
Season flank steak with salt and pepper.
Grill or pan-sear 4–6 minutes per side.
Let steak rest for 5–10 minutes.
Assemble salad: Add greens, dragonfruit, cucumber, and avocado to a large bowl.
Make dressing: Whisk together olive oil, honey, lime, salt, and pepper.
Slice the steak thinly across the grain.
Place steak slices on top of the salad.
Add cheese and drizzle with dressing.
