Pan-Seared Chicken with Dragonfruit Lime Salsa

Ingredients (Serves 2)
Chicken
2 boneless, skinless chicken breasts (6–7 oz each)
1 tbsp olive oil
¾ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika


Dragonfruit Salsa
1 cup red dragonfruit, small dice
¼ cup red onion, finely diced
1 tbsp fresh cilantro, chopped
Juice of 1 lime (about 2 tbsp)
⅛ tsp salt


Step-by-Step Instructions
Pat chicken dry with paper towels.
Season both sides of chicken with salt, pepper, garlic powder, and paprika.
Heat olive oil in a skillet over medium-high heat.
Add chicken and sear 5–6 minutes per side, until internal temperature reaches 165°F (74°C).
Remove chicken from pan and rest for 5 minutes.
While chicken rests, combine all salsa ingredients in a bowl and mix gently.
Slice chicken breasts.
Spoon dragonfruit salsa over chicken and serve immediately.
