Grilled Steak with Dragonfruit Balsamic Reduction

Ingredients (Serves 2)
Steak
1 lb ribye, strip, or sirloin steak
1 tbsp olive oil
1 tsp salt
½ tsp black pepper


Dragonfruit Reduction
1 cup red dragonfruit, chopped
2 tbsp balsamic vinegar
1 tbsp brown sugar or honey
1 tbsp water


Step-by-Step Instructions
Remove steak from refrigerator 30 minutes before cooking.
Rub steak with olive oil, salt, and pepper.
Heat grill or cast-iron skillet to high heat.
Cook steak:
4–5 minutes per side for medium-rare
Adjust to preferred doneness
Remove steak and let rest 5–10 minutes.
While steak rests, add all reduction ingredients to a saucepan.
Simmer over medium heat for 8–10 minutes, stirring and lightly mashing fruit, until thick and glossy.
Strain sauce if desired for smoothness.
Slice steak against the grain.
Drizzle dragonfruit balsamic reduction over steak and serve.
