Rich, creamy, and perfect with rice
Ingredients
2 cups ripe or canned jackfruit chunks
1 tbsp oil
1 onion, diced
3 garlic cloves, minced
1 tbsp ginger, minced
2 tbsp curry paste (red or yellow)
1 can coconut milk
1 cup vegetables (carrot, bell pepper, or potato)
1 tbsp soy sauce
Fresh cilantro & lime
Steps
Heat oil and sauté onion 4 minutes.
Add garlic and ginger for 1 minute.
Stir in curry paste.
Add jackfruit + vegetables and mix well.
Pour in coconut milk and soy sauce.
Simmer 15 minutes until veggies are soft.
Serve with lime juice and cilantro.
