Longan–Black Pepper Ribeye


Flavor profile: Sweet, peppery, savory


Ingredients
2 ribeye steaks (1–1¼ lb total)
1 cup fresh longan, peeled & pitted (or canned, drained)
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp rice vinegar
1 tsp freshly cracked black pepper
1 tbsp butter
1 tbsp neutral oil
Salt to taste


Instructions
Season steaks generously with salt and pepper.
Sear steaks in hot oil (3–4 min per side for medium-rare). Remove and rest.
In same pan, add longan, soy sauce, sugar, and vinegar.
Simmer 3–4 minutes, lightly crushing some longan.
Finish with butter and pepper; spoon sauce over steak.
