Here’s a simple and delicious recipe for jackfruit pot pie:
Ingredients:
– 1 can of young green jackfruit, drained and shredded
– 1 onion, diced
– 2 cloves of garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 cup of frozen peas
– 1 cup of vegetable broth
– 1/2 cup of coconut milk
– 2 tablespoons of flour
– 1 teaspoon of thyme
– 1 teaspoon of rosemary
– 1 teaspoon of paprika
– Salt and pepper to taste
– 1 pie crust
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, sauté the onion, garlic, carrots, and celery until softened.
3. Add the shredded jackfruit and cook for a few minutes until heated through.
4. Sprinkle the flour over the mixture and stir to combine.
5. Pour in the vegetable broth and coconut milk, stirring until the mixture thickens.
