Dragonfruit-Balsamic Steak and Vegetable Glaze

Dragonfruit-Balsamic Steak and Vegetable Glaze

Dragonfruit takes on a delicious sweet-and-tangy character when simmered with balsamic vinegar, honey, garlic, and fresh rosemary. This glossy glaze is designed for steak, but it also works beautifully with pork, roasted vegetables, and grilled mushrooms.

Yield: Approximately 3/4 cup
Prep Time: 10 minutes
Cook Time: 15–20 minutes
Storage: Refrigerate promptly; use within 5 days.

Ingredients

– 1 cup ripe dragonfruit flesh, finely diced
– 1/3 cup balsamic vinegar
– 2 tablespoons honey
– 1 tablespoon soy sauce
– 1 tablespoon fresh lemon juice
– 1 clove garlic, finely minced
– 1 teaspoon fresh rosemary, finely chopped
– 1/4 teaspoon freshly ground black pepper
– 1 tablespoon unsalted butter
– 1 pinch salt, or to taste

Instructions

1. Cut the dragonfruit in half and scoop out the flesh. Dice it finely.
2. Place the dragonfruit, balsamic vinegar, honey, soy sauce, lemon juice, garlic, rosemary, black pepper, and salt in a small saucepan.
3. Bring the mixture to a gentle simmer over medium heat, stirring until the honey dissolves.
4. Reduce the heat to medium-low and simmer uncovered for 12–15 minutes. Stir frequently to prevent sticking.
5. As the fruit softens, mash it with the back of a spoon to release its juices and help the glaze develop a smooth consistency.
6. For a smoother glaze, carefully blend the mixture with an immersion blender or transfer it to a heat-safe blender.
7. Return the blended sauce to the saucepan if necessary. Simmer for another 2–3 minutes if it needs additional thickening.
8. Remove from the heat and stir in the butter until melted and incorporated.
9. Taste and adjust the seasoning. Add a little extra lemon juice for brightness or a small amount of honey for sweetness.
10. Let the glaze cool slightly before serving.

Serving Suggestions

– Brush over grilled ribeye or New York strip steak during the final 1–2 minutes of cooking.
– Drizzle over sliced grilled flank steak just before serving.
– Brush over pork tenderloin during the final few minutes of roasting.
– Spoon over roasted portobello mushrooms or grilled eggplant for a vegetarian option.
– Serve alongside roasted carrots, sweet potatoes, or Brussels sprouts.

Chef’s Tip: Do not apply the glaze too early over very high heat because the honey can burn. For the best flavor, cook the meat first and brush on the glaze near the end.

Storage: Refrigerate promptly in a clean, covered container and use within 5 days. Reheat gently on the stovetop before serving. Do not store at room temperature.
