Sugar Apple Coconut Curry with Chickpeas & Vegetables

Ingredients

– 1 tablespoon coconut oil
– 1 medium yellow onion, diced
– 1 red bell pepper, sliced
– 2 cloves garlic, minced
– 1 tablespoon freshly grated ginger
– 2 tablespoons yellow curry paste
– ½ teaspoon ground turmeric
– ½ teaspoon ground cumin
– 1½ cups ripe sugar apple pulp, seeds removed
– 1 cup full-fat coconut milk
– ½ cup vegetable broth
– 1 tablespoon soy sauce
– 1 tablespoon fresh lime juice
– 1 teaspoon maple syrup
– 1 can (15 oz) chickpeas, drained and rinsed
– 1 medium zucchini, cut into half-moons
– 1 cup broccoli florets
– ½ teaspoon kosher salt
– ¼ teaspoon black pepper

Garnish

– ½ cup fresh sugar apple pulp, seeds removed, cut into small pieces
– ¼ cup chopped fresh cilantro
– 2 green onions, thinly sliced
– ¼ cup roasted cashews, chopped
– Lime wedges

Instructions

1. Heat the coconut oil in a large deep skillet or Dutch oven over medium heat.

2. Add the onion and red bell pepper.

3. Cook for 5–6 minutes, stirring occasionally.

4. Add the garlic and ginger.

5. Cook for 1 minute.

6. Add the curry paste, turmeric, and cumin.

7. Stir constantly for 1 minute.

8. Add the sugar apple pulp, coconut milk, vegetable broth, soy sauce, lime juice, and maple syrup.

9. Stir until completely combined.

10. Add the chickpeas, zucchini, and broccoli.

11. Bring the curry to a gentle simmer.

12. Reduce the heat to medium-low.

13. Cook uncovered for 15–18 minutes, stirring every few minutes.

14. The vegetables should be tender and the sauce should have thickened.

15. Season with salt and black pepper.

16. Taste the curry. Add another teaspoon of lime juice if necessary.

17. Serve over hot jasmine rice.

18. Spoon fresh sugar apple pieces over each serving.

19. Garnish with cilantro, green onions, and cashews.

20. Serve with lime wedges.

Tip: This recipe intentionally uses sugar apple in two forms: purée creates the creamy curry base, while fresh pieces added at the end provide bursts of unmistakable sugar-apple flavor.
