This bright, refreshing jelly captures the unmistakable flavor of passion fruit with a little extra citrus from fresh lime. Smooth, fragrant, and beautifully golden, it is a wonderful addition to breakfast or a tropical dessert spread.
Unlike a traditional passion fruit spread, this recipe produces a smooth jelly without the crunchy seeds.
Yield: Approximately 3 cups
Prep Time: 15 minutes
Cook Time: 15–20 minutes
Storage: Refrigerate promptly; use within 2 weeks.
Ingredients
– 2 cups fresh passion fruit pulp, including seeds
– 1/2 cup water
– 2 tablespoons fresh lime juice
– 1 teaspoon finely grated lime zest
– 3 cups granulated sugar
– 1 package (1.75 ounces) regular powdered fruit pectin
Instructions
1. Cut the passion fruit in half and scoop the pulp into a saucepan.
2. Add the water and bring the mixture to a gentle simmer.
3. Cook for approximately 5 minutes, stirring occasionally.
4. Remove from the heat and allow the mixture to cool slightly.
5. Pour the pulp through a fine-mesh strainer lined with clean cheesecloth.
6. Allow the juice to drain into a clean bowl. Do not squeeze the cheesecloth if you want a clearer jelly.
7. Measure 1 1/2 cups of strained passion fruit juice. If necessary, add a little water to reach the required amount.
8. Transfer the measured juice to a clean saucepan.
9. Add the lime juice, lime zest, and powdered pectin, following the manufacturer’s directions for cooked jelly.
10. Bring the mixture to a full rolling boil over medium-high heat.
11. Add the sugar and stir until completely dissolved.
12. Return the mixture to a full rolling boil and cook for the time specified by the pectin manufacturer.
13. Remove from the heat and skim off any foam.
14. Carefully pour the hot jelly into clean, heat-safe jars.
15. Allow the jars to cool briefly and refrigerate promptly.
16. Chill for several hours before serving.
Serving Suggestions
– Spread over warm toast or English muffins.
– Serve with cream cheese and crackers.
– Spoon over vanilla panna cotta.
– Use as a glaze for grilled pineapple.
– Serve with coconut pancakes.
– Drizzle over cheesecake.
Kitchen Tip: For a more pronounced lime flavor, increase the lime zest to 1 1/2 teaspoons. Avoid adding extra lime juice without adjusting the pectin recipe.
Storage: Keep refrigerated and use within 2 weeks. This is a refrigerator jelly, not a tested shelf-stable canning recipe.
