Introduction

Thick, juicy pork chops are finished with a glossy passion fruit and brown sugar glaze featuring garlic, ginger, Dijon mustard, and a little soy sauce. The combination of sweet, tangy, and savory flavors creates a delicious tropical pork dinner. Passion fruit provides the distinctive tartness that makes this glaze stand out.

Ingredients

For the Pork Chops

– 4 boneless pork chops, approximately 1 inch thick
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon smoked paprika
– 1/2 teaspoon garlic powder

For the Passion Fruit Glaze

– 1/2 cup passion fruit pulp
– 1/4 cup packed light brown sugar
– 2 tablespoons soy sauce
– 1 tablespoon Dijon mustard
– 1 tablespoon apple cider vinegar
– 1 tablespoon fresh lime juice
– 2 cloves garlic, minced
– 1 teaspoon grated fresh ginger
– 1/4 cup chicken broth
– 1 teaspoon cornstarch
– 1 tablespoon cold water

Instructions

1. Pat the pork chops dry with paper towels.
2. Combine salt, pepper, smoked paprika, and garlic powder.
3. Season both sides of the pork chops evenly.
4. Heat olive oil in a large skillet over medium-high heat.
5. Add the pork chops and sear for approximately 3 minutes per side until golden brown.
6. Reduce the heat to medium and continue cooking until the thickest part reaches 145°F.
7. Transfer the pork chops to a clean plate and rest for at least 3 minutes.
8. While the pork rests, combine passion fruit pulp, brown sugar, soy sauce, Dijon mustard, apple cider vinegar, lime juice, garlic, ginger, and chicken broth in a small saucepan.
9. Bring to a gentle simmer over medium-low heat.
10. Cook for 5–7 minutes, stirring frequently until the brown sugar dissolves and the sauce reduces slightly.
11. Mix the cornstarch with cold water.
12. Stir the cornstarch mixture into the sauce and simmer for another 1–2 minutes until glossy.
13. Return the cooked pork chops to a clean skillet.
14. Spoon the passion fruit glaze over the chops and turn them gently to coat.
15. Warm for approximately 1 minute without allowing the glaze to burn.
16. Transfer to a serving platter and spoon additional glaze over the pork.

Serving Suggestions

Serve with coconut rice, roasted carrots, sautéed spinach, or mashed sweet potatoes.

Recipe Tips

– Use thick-cut chops for the best results.
– Avoid cooking the glaze over high heat because the brown sugar can burn.
– If your passion fruit is extremely tart, add another teaspoon of brown sugar.
– For a little extra heat, add 1/4 teaspoon crushed red pepper flakes.

Why Passion Fruit Works

The acidity of passion fruit cuts through the richness of pork, while brown sugar creates a caramelized sweetness. Ginger, garlic, and mustard give the glaze a savory depth that keeps the dish balanced.
