Cook Time: 15–20 minutes
Storage: Refrigerate promptly; use within 3 weeks.

Ingredients

– 2 cups ripe dragonfruit flesh, finely mashed
– 2 tablespoons fresh lime juice
– 1 tablespoon finely grated lime zest
– 1 package (1.75 ounces) regular powdered fruit pectin
– 3 cups granulated sugar
– 1/2 cup water

Instructions

1. Cut the dragonfruit in half and scoop out the flesh. Mash it thoroughly with a fork or potato masher. For a smoother jam, briefly blend the fruit before measuring.
2. Combine the mashed dragonfruit, lime juice, lime zest, and water in a medium saucepan.
3. Stir in the powdered pectin according to the manufacturer’s directions for a cooked jam.
4. Bring the mixture to a full rolling boil over medium-high heat, stirring frequently.
5. Add the sugar and stir until completely dissolved.
6. Return the mixture to a full rolling boil and cook for the time specified by the pectin manufacturer, stirring constantly.
7. Remove the pan from the heat. Skim off any foam with a spoon.
8. Carefully transfer the hot jam into clean, heat-safe jars. Allow it to cool briefly, then refrigerate promptly.
9. Once chilled, the jam should thicken further. If it remains softer than expected, use it as a fruit topping.
