Introduction
Rich, tender duck breast meets the vibrant tropical flavor of red dragonfruit in this elegant dish. Fresh orange juice, ginger, lime, and honey create a glossy sweet-tart glaze that complements the duck without overpowering its savory flavor. This recipe brings a colorful tropical twist to a classic duck dinner.
Ingredients
For the Duck
– 4 boneless duck breasts, approximately 6–8 ounces each
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– 1/4 teaspoon ground coriander
For the Dragonfruit Ginger-Orange Glaze
– 1 cup peeled, finely diced red-fleshed dragonfruit
– 1/2 cup fresh orange juice
– 2 tablespoons honey
– 1 tablespoon soy sauce
– 1 tablespoon fresh lime juice
– 1 tablespoon finely grated fresh ginger
– 1 clove garlic, minced
– 1 teaspoon orange zest
– 1 teaspoon cornstarch
– 1 tablespoon cold water
For Garnish
– 2 tablespoons finely diced dragonfruit
– 1 tablespoon chopped fresh cilantro or parsley
– 1 teaspoon orange zest
Instructions
1. Prepare the duck. Pat the duck breasts dry with paper towels. Score the skin in a crosshatch pattern, cutting through the fat without cutting into the meat. Season both sides with salt, black pepper, garlic powder, and ground coriander.
2. Prepare the dragonfruit. Peel and dice the dragonfruit. Measure 1 cup for the sauce and reserve 2 tablespoons for garnish.
3. Make the glaze. Combine the dragonfruit, orange juice, honey, soy sauce, lime juice, ginger, garlic, and orange zest in a small saucepan.
4. Simmer the sauce. Bring the mixture to a gentle simmer over medium-low heat. Cook for 8–10 minutes, stirring occasionally, until the dragonfruit softens.
5. Blend the glaze. Carefully blend the sauce with an immersion blender until smooth. Alternatively, transfer it carefully to a blender and blend until smooth.
6. Thicken the glaze. Mix the cornstarch and cold water in a small bowl. Stir this mixture into the simmering sauce and cook for 1–2 minutes, until glossy and slightly thickened. Remove from the heat.
7. Render the duck fat. Place the duck breasts skin-side down in a cold, oven-safe skillet. Turn the heat to medium and cook for approximately 8–12 minutes, allowing the fat to render and the skin to become golden and crisp. Carefully pour off excess rendered fat as needed.
8. Sear the other side. Turn the duck breasts over and cook for 2 minutes.
9. Finish in the oven. Transfer the skillet to a preheated 400°F oven. Roast until the thickest part of each breast reaches 165°F for food safety. Begin checking after approximately 5 minutes, as cooking time depends on the thickness of the breasts.
10. Rest the duck. Transfer the cooked duck to a clean cutting board and let it rest for 5 minutes before slicing.
11. Slice and plate. Slice the duck across the grain and arrange it on a serving platter. Spoon the warm dragonfruit glaze over the slices.
12. Garnish and serve. Sprinkle the reserved diced dragonfruit, fresh herbs, and orange zest over the duck.
Serving Suggestions
Serve with roasted sweet potatoes, steamed green beans, jasmine rice, or roasted seasonal vegetables.
Recipe Tips
– Red-fleshed dragonfruit creates the most dramatic pink glaze.
– Add another teaspoon of lime juice if you prefer a brighter, tangier sauce.
– Duck fat can be strained and refrigerated for later use in roasted potatoes.
– Keep the sauce separate from raw duck and any utensils that have touched it.
Why Dragonfruit Works
Dragonfruit contributes beautiful color and mild sweetness, while orange, ginger, and lime provide the stronger flavors needed to balance the richness of the duck. Together, they create a tropical sauce that makes dragonfruit an important part of the finished dish.
