Cook Time: 20–25 minutes
Ingredients
For the Beef
– 1½ lb (680 g) flank steak or sirloin steak
– 1 tbsp olive oil
– 1 tsp salt
– ½ tsp freshly ground black pepper
– 1 tsp garlic powder
For the Passion Fruit Marinade
– ¼ cup (60 ml) passion fruit pulp, with seeds
– 2 tbsp soy sauce
– 1 tbsp Worcestershire sauce
– 1 tbsp olive oil
– 1 tbsp fresh lime juice
– 1 tsp brown sugar
– 2 garlic cloves, minced
For the Passion Fruit Pan Sauce
– ¼ cup (60 ml) passion fruit pulp
– ½ cup beef broth
– 1 tbsp soy sauce
– 1 tsp Dijon mustard
– 1 tsp honey
– 1 tbsp unsalted butter
For the Caramelized Onions
– 1 large yellow onion, thinly sliced
– 1 tbsp olive oil
– ¼ tsp salt
Instructions
1. In a bowl, whisk together the passion fruit pulp, soy sauce, Worcestershire sauce, olive oil, lime juice, brown sugar, and minced garlic.
2. Place the steak in a shallow dish or resealable food-safe bag. Pour the marinade over the steak and turn to coat. Refrigerate for 30 minutes. Do not leave the steak in the acidic marinade for several hours, as the texture can become mushy.
3. Remove the steak from the marinade and discard the used marinade. Pat the steak dry with paper towels. Season with salt, black pepper, and garlic powder.
4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced onion and ¼ teaspoon salt. Cook for 10–12 minutes, stirring frequently, until soft and golden. Transfer to a plate.
5. Increase the heat to medium-high. Add the steak and sear for approximately 4–6 minutes per side, depending on thickness and desired doneness.
6. For food safety, cook whole beef steaks to at least 145°F (63°C), followed by a 3-minute rest. Adjust the cooking time for your preferred doneness.
7. Transfer the steak to a clean cutting board and rest for 3 minutes.
8. While the steak rests, reduce the skillet heat to medium. Add the beef broth and scrape up the browned bits from the bottom of the pan.
9. Stir in the fresh passion fruit pulp, soy sauce, Dijon mustard, and honey. Simmer for 3–5 minutes until slightly reduced.
10. Remove the skillet from the heat and stir in the butter until the sauce becomes glossy.
11. Slice the steak thinly against the grain.
12. Arrange the steak on a platter, top with the caramelized onions, and spoon the passion fruit pan sauce over the meat.
Serving Suggestions
Serve with garlic mashed potatoes, roasted asparagus, or buttered rice. The bright, tropical acidity of passion fruit balances the savory beef and sweet onions beautifully.
