Ingredients
Salmon
– 4 salmon fillets, 6 oz each
– 1 tablespoon olive oil
– ¾ teaspoon kosher salt
– ¼ teaspoon black pepper
Mango Glaze
– 1 cup ripe mango purée
– 2 tablespoons fresh lime juice
– 1 tablespoon honey
– 1 tablespoon soy sauce
– 1 tablespoon rice vinegar
– 1 teaspoon grated fresh ginger
– 1 clove garlic, finely minced
– ½ teaspoon chili flakes
– ½ teaspoon sesame oil
Garnish
– ½ cup diced fresh mango
– 2 tablespoons sliced green onions
– 1 tablespoon chopped cilantro
– 1 teaspoon toasted sesame seeds
– Lime wedges
Instructions
1. Preheat the oven to 400°F (205°C).
2. Pat the salmon fillets dry with paper towels.
3. Season both sides with salt and black pepper.
4. Heat the olive oil in an oven-safe skillet over medium-high heat.
5. Place the salmon skin-side down in the skillet.
6. Sear for 3 minutes without moving the fish.
7. While the salmon is searing, combine the mango purée, lime juice, honey, soy sauce, rice vinegar, ginger, garlic, chili flakes, and sesame oil in a small saucepan.
8. Bring the mango mixture to a gentle simmer over medium heat.
9. Cook for 4–5 minutes, stirring occasionally, until slightly thickened.
10. Brush approximately half of the mango glaze over the salmon.
11. Transfer the skillet to the oven.
12. Bake for 6–8 minutes, depending on the thickness of the salmon.
13. The salmon should reach 145°F (63°C) in the thickest part.
14. Remove the salmon from the oven.
15. Brush with the remaining mango glaze.
16. Allow the salmon to rest for 2 minutes.
17. Top with diced fresh mango, green onions, cilantro, and sesame seeds.
18. Serve immediately with rice, roasted vegetables, or a fresh green salad.
Tip: Don’t make the glaze overly thick. It should be thick enough to cling to the salmon but still have enough moisture to provide a generous mango sauce.
