Guava-Chipotle Beef Tacos

Ingredients

Guava-Chipotle Beef

– 1½ pounds flank steak
– ½ cup ripe guava purée
– 2 tablespoons fresh lime juice
– 1 tablespoon olive oil
– 1 tablespoon soy sauce
– 1 tablespoon honey
– 2 teaspoons minced chipotle peppers in adobo sauce
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– ½ teaspoon kosher salt
– ¼ teaspoon black pepper

Tacos

– 8 small flour or corn tortillas
– 1 cup shredded red cabbage
– ½ cup diced avocado
– ¼ cup finely diced red onion
– ¼ cup chopped fresh cilantro
– ½ cup sour cream
– 1 tablespoon fresh lime juice

Instructions

1. Place the guava purée, lime juice, olive oil, soy sauce, honey, chipotle peppers, garlic, cumin, smoked paprika, salt, and black pepper in a bowl.

2. Whisk until completely combined.

3. Place the flank steak in a shallow dish or resealable bag.

4. Pour the guava marinade over the steak and turn to coat.

5. Refrigerate for 30–60 minutes. Do not marinate overnight because the fruit acids can affect the texture of the beef.

6. Remove the steak from the refrigerator 15 minutes before cooking.

7. Heat a grill or heavy skillet over high heat.

8. Remove the steak from the marinade and allow excess marinade to drip off.

9. Grill or sear the steak for approximately 4–5 minutes per side for medium-rare, depending on thickness.

10. Transfer the steak to a cutting board and rest for 8–10 minutes.

11. While the steak rests, combine the sour cream and 1 tablespoon lime juice in a small bowl.

12. Warm the tortillas in a dry skillet for approximately 20–30 seconds per side.

13. Slice the steak thinly against the grain.

14. Divide the beef among the tortillas.

15. Top each taco with red cabbage, avocado, red onion, and cilantro.

16. Drizzle with the lime sour cream.

17. Serve immediately with lime wedges.

Tip: The guava provides sweetness while the chipotle supplies smoky heat. The lime and cabbage keep the tacos from becoming overly sweet.
