Jackfruit Fried Rice



Ripe jackfruit gives a sweet-savory flavor

Ingredients

2 cups cooked rice

1 cup diced ripe jackfruit

2 eggs (optional)

1 tbsp soy sauce

1 tbsp oil

1 small onion, diced

½ cup peas or mixed veggies

1 garlic clove, minced

Green onions


Steps

1. Heat oil and sauté onion 3 minutes.


2. Add garlic and vegetables; cook 2 minutes.


3. Push to the side, scramble eggs if using.


4. Add rice and soy sauce.


5. Stir in jackfruit and fry 3–4 minutes.


6. Top with green onions.
