Cook Time: 12–16 minutes
Total Time: Approximately 40 minutes

Introduction

Rich, savory lamb chops meet the delicate sweetness of fresh lychee in this elegant tropical-inspired dish. A bright mint, lime, and lychee sauce cuts through the richness of the lamb and creates a memorable combination.

Ingredients

Lamb

– 8 lamb rib chops, approximately 3 ounces each
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon fresh rosemary, finely chopped
– 1 teaspoon kosher salt
– ½ teaspoon black pepper
– ½ teaspoon ground cumin

Lychee-Mint Sauce

– 1 cup fresh lychee flesh, peeled and seeded
– 2 tablespoons fresh lime juice
– 1 tablespoon honey
– 1 tablespoon red wine vinegar
– 2 tablespoons fresh mint leaves, finely chopped
– 1 tablespoon olive oil
– ¼ teaspoon kosher salt
– ⅛ teaspoon black pepper
– 1 tablespoon finely minced shallot

Instructions

1. Pat the lamb chops dry with paper towels.
2. In a small bowl, combine olive oil, garlic, rosemary, salt, pepper, and cumin.
3. Rub the mixture over both sides of the lamb chops.
4. Allow the chops to rest at room temperature for approximately 20 minutes.
5. Prepare the lychee sauce while the lamb rests.
6. Finely chop half of the lychee flesh.
7. Place the remaining lychee in a blender with the lime juice, honey, red wine vinegar, olive oil, salt, and pepper.
8. Blend until smooth.
9. Transfer the sauce to a bowl.
10. Stir in the chopped lychee, mint, and shallot.
11. Refrigerate until ready to serve.
12. Preheat a grill or grill pan to medium-high heat.
13. Grill the lamb chops for approximately 3–4 minutes per side for medium-rare, depending on thickness.
14. For food safety, check the internal temperature with a thermometer. Whole cuts of lamb should reach 145°F followed by a 3-minute rest.
15. Transfer the chops to a plate and allow them to rest.
16. Spoon the lychee-mint sauce over the lamb just before serving.

Serving Suggestions

Serve with roasted baby potatoes, grilled asparagus, or coconut-infused couscous.

Recipe Tip

Do not cook the lychee sauce with the lamb. Keeping it fresh preserves the fruit’s delicate floral flavor and provides a refreshing contrast to the grilled meat.
